Finer grounds have more of it, so they give up their soluble compounds faster. The target across every brew method is an extraction yield of roughly 18–22% of the coffee's mass — below that it tastes sour, above it tastes bitter. How to read the chart
Brew time drives everything
The pattern in that table is not a coincidence: as brew time gets shorter, grind gets finer. Espresso has 25 seconds to extract, so it needs the enormous surface area of a fine grind. Cold brew has 18 hours, so it needs the opposite — a coarse grind that extracts slowly enough not to turn harsh over that span. Everything else falls in between on the same curve.
Pressure and filtration matter too
Espresso can go finer than any drip method because nine bars of pressure will push water through a bed that would otherwise choke. A metal French press screen can handle coarse grounds but lets fines through into the cup, which is why French press grinds should be coarse and uniform. A paper filter traps fines but clogs when there are too many, which is why over-grinding a pour-over stalls the drawdown.
The visual comparison is more useful than the number
Almost no home grinder tells you microns, and dial settings are not comparable between machines. Grind a small amount, tip it into your palm, and compare it against salt, sand or sugar. It sounds unscientific. It is more reliable than trusting a number stamped on a dial.

How a burr grinder works
A burr grinder has two abrasive surfaces — flat discs or nested cones — set a fixed distance apart. Beans are fed between them and crushed progressively until the fragments are small enough to fall through the gap. The gap is the setting. Because nothing exits until it fits, almost every particle comes out the same size, and the whole coffee bed then extracts at the same rate.
How a blade grinder works
A blade grinder is a propeller in a cup. It doesn't measure anything. It spins fast and smashes whatever happens to drift into its path, and the only control you have is how long you hold the button down.
Why that produces boulders and fines at the same time
The beans nearest the blade get hit repeatedly and shatter into dust. The beans pushed to the outer wall or sitting under the pile may barely get touched. Nothing removes a particle from the chamber once it's small enough, so the fines just keep getting finer while the boulders sit there intact. Run it longer and you don't get a finer grind — you get more dust and the same chunks.
In the brewer, those two populations behave like two different coffees. The dust over-extracts almost immediately and contributes bitterness and astringency. The boulders never fully extract and contribute sourness and thin, papery emptiness. You get both defects in one cup, which is why blade-ground coffee often tastes harsh and weak simultaneously — a combination that makes no sense until you know what's in the basket.
What you actually need to buy
Not much. A modest hand-cranked burr grinder outperforms an expensive blade grinder for espresso-free brewing, and a basic electric burr grinder handles drip, pour-over and French press without complaint. How to tell if your grind is wrong — from the taste
You don't need a refractometer. Your tongue reports extraction accurately if you know what to listen for.
Sour, thin, hollow — the grind is too coarse
Under-extraction. Water didn't have enough surface area to work with, so it pulled out the acids (which dissolve first) and left the sugars and the body behind. It tastes sharp and citrusy in an unpleasant, unfinished way, often with a watery mouthfeel and a short, empty finish. Some people read it as "weak" and add more coffee, which makes it worse. Fix: grind finer.
Bitter, harsh, drying — the grind is too fine
Over-extraction. Too much surface area, so water kept dissolving past the good compounds into the bitter ones. It tastes ashy or burnt, dries the sides of your tongue, and leaves an aftertaste that lingers longer than you'd like. In a pour-over it usually comes with a drawdown that takes far longer than it should. Fix: grind coarser.
Both at once — the grind is uneven
Bitter and sour in the same sip, or a cup that tastes harsh but somehow thin, means you're extracting two particle sizes at two different rates. No adjustment fixes this, because the problem isn't where the dial is — it's the spread around it. That's a grinder problem, and it's the signature of a blade grinder.
Flat and dull, but neither sour nor bitter — it isn't the grind
That's staleness. Coffee tastes best roughly 5 to 21 days after roasting; past that, aroma and sweetness fade and no grind setting brings them back. Check the roast date on the bag — if there isn't one, that's the answer.
How to adjust without chasing your tail
Change one variable at a time and move in small steps. Keep the ratio fixed at 1:15 to 1:16 by weight while you dial grind, and brew the same method the same way twice before deciding whether you improved anything. Grind fresh, or the chart doesn't help

What grind size should I use for a drip coffee maker?
Medium — roughly 600–800 microns, about the texture of table salt. If your machine brews fast or the basket is a cone rather than a flat bottom, go one step finer.
Why does my coffee taste sour?
