Eli Perez is the founder of Bean Reaper, a Florida-based specialty coffee brand built on a single premise: coffee should be roasted after you order it, not warehoused for months before you meet it. He started the company and he runs it.

What he actually does

Titles inflate easily in coffee, so here is the honest inventory. Eli built the brand, put together the nine-coffee lineup the store carries, and writes and edits every guide in the Coffee Journal. He does not roast the coffee, and this page is not going to pretend he does. His job is the part before and after the roaster: deciding what Bean Reaper sells, and making sure everything the store publishes about coffee is worth reading.

How the guides are made

Every method in the Journal is tested on the coffee the store actually sells, brewed with the kind of gear most kitchens already have — a French press, a basic dripper, a kitchen scale. No lab equipment, no gear you would need to special-order to follow along. And when a guide states a number — a brew ratio, a water temperature, a caffeine figure — that number is cross-checked against an established reference: SCA brewing standards for ratios and temperatures, FDA guidance for caffeine. Nothing is invented to sound authoritative.

Why the Journal exists

Bean Reaper's entire pitch is freshness. A store that stakes everything on roast dates should be able to explain, in plain language, what difference freshness actually makes — where you will taste it, and where you honestly will not. That is the Journal's job. The claims behind the store itself live on the Freshness Promise page; the Journal is where those claims get explained and put to work in your kitchen.

Editorial standards

Three rules, applied to every article. First, every piece shows its publish date, and an updated date once it has been revised — undated advice about freshness would be a strange look for this store. Second, when something is corrected, the date moves; a dateline that never changes is a warning sign, not a comfort. Third, no figure appears in a guide unless it can be traced to an established source. If you find something that fails any of those tests, tell us. It will be fixed, and the date will move to prove it.
