The Bean Reaper Freshness Promise
The promise, in short
We don't roast your coffee until you order it. Your bag is roasted in a small batch, stamped with its actual roast date, and shipped within 2 business days. We hold no roasted inventory. If your coffee doesn't arrive in good shape, you have 30 days to get your money back.
Most coffee companies decide what to roast based on a forecast. We decide based on your order. That single difference is the whole business, and everything below is just the mechanics of it.
The Problem with Roasting in Advance
Coffee has a peak freshness window — roughly 5 to 21 days after roasting. Inside that window, the volatile aromatic compounds created during the roast are still intact, CO2 is still present and acting as a natural preservative, and the oils that carry flavor are at their most expressive. Outside it, oxidation takes over. Complexity flattens. What's left is technically coffee.
The standard industry model works against that window by design. A roaster runs a large batch, fills a warehouse, and ships from that stock until it runs out. It's efficient, and it makes the time between roast and cup completely unpredictable. A bag might be roasted Monday, ship Thursday, and reach you the following week comfortably inside the window. Or it might sit in a warehouse, then a distributor, then a shelf, and reach you a season late. The customer has no way to tell the two apart, because the only date on the bag is a best-by date set 12 to 18 months out.
Most of the coffee industry accepts that degradation as the cost of operating at scale. We'd rather not.
How Roast-to-Order Actually Works Here
There's no clever machinery to this. It's just a different order of operations.
- You order. Nothing has been roasted yet. Your order is what puts green coffee in the roaster.
- Your order joins the roast queue. We batch by roast profile, sized to fill current orders rather than to build inventory.
- We roast, in small batches. 100% specialty-grade Arabica, roasted to the profile that bean is meant for.
- We stamp the bag with the roast date. The real one. Not a sell-by date, not a packed-on date. Day one of your freshness window.
- We package and ship within 2 business days of roasting — whole bean or ground, your choice at checkout.
- It lands while it still has window left. Which is the entire point of the preceding five steps.
The honest cost of this model: the queue occasionally means a slightly longer wait than a warehouse operation that ships same-day from a shelf. If we're busy, your roast may happen the following day rather than the moment your order lands. We'd rather tell you that plainly than pretend the trade-off doesn't exist. A day's wait for coffee roasted specifically for you beats instant shipment of coffee that's been sitting since spring.
Why We Refuse to Warehouse Coffee
Warehousing roasted coffee is a decision to sell it outside its best window. There isn't a version of it that isn't.
Once coffee is roasted, the clock runs whether or not anyone has bought it. Stock sitting in a warehouse isn't being preserved; it's aging, in the dark, at someone else's convenience. Every week it waits is a week subtracted from your window rather than ours. Holding inventory would make our fulfillment tidier and our forecasting easier, and it would do that by quietly transferring the cost to the person drinking it.
Roast-to-order doesn't scale the way inventory models do. It needs tighter coordination, smaller batches, and less flexibility in fulfillment timing. For an operation moving thousands of pounds a day it isn't feasible. For a small roastery where the quality of the cup is the entire product, it's the only model that makes sense.
So: no warehouse of roasted stock. No mystery-aged bags. No subscription you have to fight your way out of — we don't sell one. You order when you want coffee, and we roast it then.
What Fresh Coffee Does That Stale Coffee Doesn't
You don't have to trust us on any of this. Fresh coffee behaves differently, observably, before you even taste it.
It blooms. Pour hot water over fresh grounds and the bed swells, foams and hisses as CO2 escapes. Stale coffee lies flat — it off-gassed weeks or months ago, in a bag, somewhere else.
It fills the room. Opening a freshly roasted bag is an event. Opening a stale one smells faintly of what it used to be.
It tastes like itself. Origin character, processing notes, varietal traits — these are most pronounced in fresh coffee and fade as it ages. Stale coffee tastes like "coffee." Fresh coffee tastes like the specific coffee it was roasted to be.
The 30-Day Guarantee
We're a small roastery, and occasionally something goes wrong. A roast that didn't develop the way it should have. A shipping delay that ate into your window. A bag that arrived looking like it lost a fight.
When that happens, we fix it. Contact us within 30 days and you get a replacement or your money back — your call. No lengthy return process, no fine print about opened bags, no arguing about whether you brewed it correctly. An unopened bag is no use to anyone as evidence; we'd rather you actually drank it and told us it was wrong.
The guarantee is easy to offer because the operation is built around not needing it.

Frequently Asked Questions
How fresh will my coffee be when it arrives?
It's roasted after you order and ships within 2 business days of roasting, so it reaches you with meaningful time left in the 5–21 day peak window. The roast date is stamped on the bag, so you never have to take our word for it.
Why isn't my order shipping the same day?
Because it hasn't been roasted yet. That's the trade-off of roast-to-order: a short wait up front in exchange for coffee that isn't already months old. Ordering before your current bag runs out removes the problem entirely.
Do you sell a subscription?
No. There's no subscription product and nothing to cancel. Order when you want coffee.
Whole bean or ground — does it affect freshness?
Yes. Whole bean holds its character considerably longer, because grinding multiplies the surface area exposed to oxygen. We'll grind it for you if you'd rather, but if you own a grinder, buy whole bean and grind per brew.
What does the guarantee cover?
Anything that means the coffee didn't arrive the way it should have — a bad roast, a damaged bag, a delay that cost you your window. Contact us within 30 days for a replacement or a refund. Opened bags are fine.
