Coffee Extraction Explained: Why Your Coffee Tastes Sour or Bitter

Short answer

Sour, thin coffee is under-extracted — the water pulled too little out of the grounds. Bitter, drying coffee is over-extracted — it pulled too much. Aim for an extraction yield of 18–22% at a strength of 1.15–1.35% TDS. Grind finer to fix sour; grind coarser to fix bitter.

Nearly every complaint about home-brewed coffee is one of two complaints wearing a different coat. It is either sour or it is bitter. Once you can tell those apart reliably, coffee stops being a matter of taste and becomes a matter of arithmetic, which is much easier to fix.

What extraction actually means

Roasted coffee is only about 30% water-soluble. The rest is woody cellulose that will never dissolve no matter how long you soak it. Brewing is the act of dissolving some fraction of that soluble portion and carrying it into your cup.

Extraction yield is the share of the dry coffee's mass that ended up dissolved in the brew. The Specialty Coffee Association puts the well-balanced window at 18–22%. Below 18% and you have left too much behind. Above 22% and you have started dissolving things you did not want.

The compounds come out in order

This is the detail that makes the whole thing intuitive. Coffee's soluble compounds do not dissolve simultaneously — they leave the grounds roughly in sequence:

  • First: acids and the light, fruity, floral aromatics. Fast, water-loving, and out early.
  • Next: sugars and caramelised compounds — sweetness, body, the caramel and chocolate notes.
  • Last: bitter and astringent compounds, including the heavier plant material that dries your mouth out.

So a brew that stops too early is all acid and no sugar: sour. A brew that goes too far has picked up everything, including the parts nobody wanted: bitter. The good stuff — sweetness, balance, a finish that lasts — lives in the middle, which is what 18–22% is describing.

Strength and extraction are two separate dials

This is the single most important idea on this page, and it is the one most brewing advice gets wrong.

  • Strength is concentration: how much dissolved coffee is in the water, measured as total dissolved solids. The Golden Cup target is 1.15–1.35% TDS. Strength is set almost entirely by your ratio — grams of coffee per gram of water.
  • Extraction is efficiency: what share of the grounds you managed to dissolve. It is set by grind size, contact time, water temperature and agitation.

You can have any combination of the two. Weak and over-extracted (bitter and watery — the classic diner pot). Strong and under-extracted (intense, sour, aggressive). Correct extraction at the wrong strength. They are independent, and confusing them is why people spend a month adjusting things at random.

The SCA brew control chart, in words

The SCA's brewing control chart plots strength on one axis against extraction on the other, producing nine boxes with the ideal cup in the centre. It is a genuinely useful diagnostic because it forces you to name both problems separately.

Read your cup into a box, then fix only the axis that is wrong. If it is thin, add coffee — see the coffee-to-water ratio chart. If it is sour or bitter, leave the dose alone and change the grind.

Under-extraction: sour, thin, salty

Under-extracted coffee is the more commonly misdiagnosed of the two, because people describe it as "bitter" when what they mean is "unpleasant."

What it tastes like

  • Sour — sharp and lemony in a way that puckers rather than brightens. Not the pleasant acidity of a good light roast.
  • Salty — a genuinely odd note, and a reliable tell. Some of coffee's early-extracting compounds read as saline.
  • Thin and short. The flavour arrives and then vanishes with no finish. No sweetness at all.
  • Vegetal or grassy in light roasts, especially at low temperatures.

What causes it

Anything that makes the water's job harder or shorter: grind too coarse, brew too short, water too cool, dose too large for the brewer, or a bed the water channelled straight through instead of soaking evenly. Cheap drip machines are frequent offenders because many never reach 195–205°F (91–96°C), and no ratio adjustment compensates for water that is 15 degrees cold.

Over-extraction: bitter, drying, hollow

What it tastes like

  • Bitter — burnt, ashy, like liquid toast.
  • Astringent — the mouth-drying, tannic sensation of over-steeped black tea. This is the most specific signal of the group; astringency is almost never anything else.
  • Hollow. Oddly, over-extracted coffee often loses its middle: the aromatics have degraded and what remains is bitterness at the front and dryness at the back.
  • Lingering unpleasantly — the finish outstays its welcome.

What causes it

Anything that pushes the water past the sweet spot: grind too fine, brew too long, water too hot, too much agitation, too small a dose for the volume, or coffee left sitting on the grounds after brewing. That last one accounts for a lot of bad French press — a plunged press is still extracting until you decant it.

Grinder quality matters here more than most gear. A blade grinder produces boulders and dust in the same batch, so the dust over-extracts into bitterness while the boulders under-extract into sourness, in the same cup. The levers, in the order you should use them

1. Grind size

The strongest and fastest lever. Finer means more surface area and faster extraction; coarser means less. Change one step and taste before changing anything else. If you own one adjustable variable, this is the one that matters.

2. Contact time

Longer contact extracts more. In pour-over this shows up as drawdown time; in immersion it is the steep. Note that grind and time are coupled — a finer grind slows drawdown, so it lengthens contact time as well as raising extraction rate. That is why changing both at once teaches you nothing.

3. Water temperature

Hotter water extracts faster. Stay inside 195–205°F: below that you get sourness you cannot grind your way out of, and at a rolling boil you scald the grounds. Light roasts are denser and less soluble, so they generally prefer the top of the range; dark roasts are more soluble and do better nearer 195°F.

4. Agitation and evenness

Stirring, swirling and pour turbulence all raise extraction by refreshing the water touching each particle. Evenness matters as much as amount: if water channels through one part of the bed, that part over-extracts while the rest under-extracts, and the cup tastes sour and bitter simultaneously. 5. Ratio — for strength only

Dialling in without a refractometer

You do not need to measure TDS. You need a scale, a timer, and the discipline to change one thing at a time.

  1. Fix your ratio at 1:16 and leave it alone for the whole exercise.
  2. Fix your water at 200°F (93°C) and your brew time at the method's standard.
  3. Brew, and decide one thing only: sour or bitter?
  4. Sour → one step finer. Bitter → one step coarser. Brew again.
  5. Repeat until the cup tastes sweet with a finish that lasts. That is your grind setting for that coffee.
  6. Then adjust the ratio to suit how strong you like it.

Sweetness is the target, not the absence of bitterness. A properly extracted cup tastes sweet without sugar in it — that is the signal you are hunting for, and once you have tasted it deliberately you will not mistake it again.

Frequently asked questions

Why does my coffee taste sour?

It is under-extracted — the water dissolved coffee's acids but never got to its sugars. Grind one step finer, make sure your water is 195–205°F, and extend the brew slightly. Sourness is almost never caused by the beans themselves unless they are extremely light-roasted.

Why does my coffee taste bitter?

It is over-extracted, or it is a dark roast doing what dark roasts do. Grind coarser, shorten the brew, drop the water temperature toward 195°F, and decant off the grounds immediately. If it is also drying in the mouth, over-extraction is confirmed.

What is a good extraction yield for coffee?

18 to 22% of the dry coffee's mass dissolved into the cup, per the SCA. Below 18% tastes sour and thin; above 22% tastes bitter and drying. Measuring it requires a refractometer, but tasting for sweetness gets you to the same place.

Is strength the same as extraction?

Can coffee be sour and bitter at the same time?

Does roast level change extraction?
